sambal ayam

1 kg chicken, cut into small pieces
3 tbs chilli paste
1 tsp shrimp paste granules (belacan)
3 - 5 tablespoon tomato sauce (ketchup)
2 ripe tomatoes, chopped
1 large onion, sliced
1 lemongrass, crushed
3 -5 tbs sugar
salt, pepper and chicken granules to taste

Blended ingredients
3 cloves garlic
1 large onion
2 cm galagal
2 cm ginger

Heat oil in wok. Fry pounded ingredients, lemongrass and chilli paste until fragrant. Add chicken and cook until chicken tender (add water if necessary). Add shrimp tomato sauce, onion and season with seasonal ingredients. Stir until sauce thick. Serve with white rice, coconut rice or glutinuous rice.

  2. I am using chili kering blender for all my sambal. Boil the chili first then only you blend it.
