galangal fried chicken

masakan Indonesia terutama dari belah Sumatera seperti Medan dan Minang....

1 whole chicken (about 1kg), cut into 8 pieces
4 tbsp grated fresh galangal
2 bay leaves
1 lemon grass, crushed
oil for deep frying

Finely blended
3 garlic cloves
5 shallots
3 candle nuts, fry without oil
1 tsp tamarind juice
2 tsp fresh turmeric, chop finely

Mix all ingredients well and put in a large wok. Cover wok with lid and simmer chicken until half cook. Add little water if necessary. Remove from heat and deep fry chicken together with the herbs and spices. Serve hot.
