chicken soup

1/2 chicken, cut into small pieces
3 cups water
2 clove garlic, chopped
1 tablespoon oil
2 large potatoes, cubed
1 large carrot, cubed
1/2 cup cherry tomato
5 small hot chilli, crushed
1 'sup bunjut'
1 chicken cube
salt, pepper and sugar to season
1 stalk spring onions, finely cut
2 tablespoon fried shallots

1) Heat oil in a pan and fry chopped garlic until golden brown. Add 3 cups of water. When it comes to boil add chicken pieces, sup bunjut, chicken cube, and cook for 10 to 20 minutes until done.
2) Add potato, carrot, small chilli and cook for another 10 minutes or until potato tender. Add tomato and season with salt, pepper and sugar.
3) Garnish with spring onions and fried shallots.
4) Serve hot with dinner roll or white rice. Enjoy!
