potato and spinach bake

Dish ini anak saya Eka yang sediakan. Sebenarnya Eka juga pandai masak dan selalunya masakan Eka menjadi dan sedap. Resepi diatas Eka ambil dari majalah BBC GoodFood. Dia masak dish diatas untuk makan dengan Orange Chicken Marmalade.

Potato and spinach layer with nutmeg and cheese
1 kg large potatoes, ends trimmed then thickly sliced
2 large onions, halved and sliced
1 tbsp olive oil
142ml carton double cream
150ml milk
pinch of nutmeg
225g young spinach
200g pack gruyere cheese, grated (or any kind of cheese)

1) Heat oven to 190C. Bring a large pan of salted water to the boil. Add the potatoes, return to the boil, then cook for 4 mins until just tender. Drain. Meanwhile, stir-fry the onions in the oil. When they have softened, add the cream and milk, then add in the nutmeg, season well, then simmer for about 1 min.
2) Get out a large, shallow ovenproof dish and cover the base with half the potatoes. Spoon over half the onion mixture then pack the spinach leaves on top, pressing them down well. Top with the rest of the potatoes then evenly pour over the remaining onions and their liquids.
3) Scatter over the cheese and bake for 25 to 30 mins until golden and bubbling.
