easy trifle

Mudah dan cepat disediakan.....

Ingredients1 chocolate swiss roll or butter chocolate cake
4 cups milk
3 tablespoons sugar
3 tablespoons custard powder, mix with
3 tablespoons milk
1 teaspoon vanillla flavouring
1 egg yolk
1 tablespoon butter
1(820g)can peach slices in syrup
2(90g)boxes instant jelly crystals, any flavour

MethodSlice chocolate roll/cake and arrange to cover 9" x 13" glass dish.
Drain the peach slices and sprinkle about 2 to 3 tbs of its syrup on the cake.
Custard; mix milk, sugar and custard and stir over slow heat until thicken. Mix vanilla and egg yolk, stir. Remove from heat, mix butter.
Pour custard over the cake and spread out the custard all over the cake so that there is no gap.
Arrange the peaches slice on custard.
Make the jelly according to the packing instructions. Pour over the custard and peaches. Cool in the refrigerator.

chilli bean, beef and tomato soup

My recipe
The ingredients;
3 garlic cloves, pounded or crushed
2 tablespoon chilli paste (optional)
1 beef or chicken cube (flavour)
salt and peppper and sugar to taste
dried herbs
olive oil

Other ingredients;
minced beef
vegetables; white large onion, bell pepper, zucchini, celery, etc...
ready-made pasta sauce, any flavour
baked beans
hot mexican chilli bean
diced tomatoes

1) Saute garlic in olive oil for a few seconds. Add chilli paste and stir for a few minutes. Add ground beef and fry until beef cook (for 3 to 5 minutes).
2) Add vegetables and stir for another 3 to 5 minutes. Add beans, tomato soup, diced tomatoes, pasta sauce and cook until the soups boil. Season to taste. Serve hot with boil pasta or bread.

agar-agar serikaya

Jika anda boleh membaca tulisan jawi, why not cuba resepi ini dari buku resepi lama saya. Ada banyak resepi yang sedap belaka dan Insyaallah nanti saya cuba postkan lagi resepi-resepi dari buku tersebut.

2 tahil agar-agar
3 butir telur ayam
2 kati gula pasir
10 helai daun pandan wangi
10 helai daun serai wangi
1 biji kelapa yang cukup tua
sedikit pencelup kuning
1 acuan atau mangkuk agar-agar

Cara membuatnya:
1) Rendam agar-agar selama 3 jam sebelum digunakan.
2) Bersihkan agar-agar sebelum direbus dengan menggunakan air sebanyak 4 gayung.
3) Parut kelapa dan perah santan dengan tidak memakai air walau sedikitpun.
4) Bila agar-agar itu sudah mendidih masukkan kedalamnya 2/3 daripada gula tadi. Masak agar-agar itu diatas api perlahan-lahan.
5) Pecah telur dan pukul dengan gula yang tinggal tadi.
6) Masukkan telur yang sudah kembang ini kedalam agar-agar yang diatas api itu dan terus dikacau. Biarkan diatas api anggaran 10 minit baru angkat dan sejukkan.

cinnamon roll

4 cups all-purpose flour
1 package active dry yeast
1 cup warm milk
1/2 cup granulated sugar
1/3 cup butter, melted
1 teaspoon salt
2 eggs

1) Dissolve the yeast in warm milk. Combine sugar, butter, eggs and salt. Stir in flour.
2) Turn the dough out onto a lightly floured board and knead until smooth. Sprinkle lightly with flour, as needed, to keep dough from sticking (dough should be slightly sticky).
3) Add as little flour as possible; the more flour that is added, the heavier the bread will be, and the goal is to have very light bread, so if the dough is sticking rub a little oil on your hands.
4) Place in a lightly greased bowl and turn once to grease top. Cover, let rise in a warm place free from draft about one hour or until dough has nearly doubled in size.
5) Punch down, and roll the dough on a clean surface lightly dusted with flour. Roll out to a rectangle shape until it is approximately 21 inches long and 16 inches wide by 1/4" thick. If dough begins to resist, stop working and allow it to rest for 15 minutes.

Preheat oven to 400°F. While oven is preheating, mix ingredients for filling.

1 cup brown sugar, firmly packed
2 1/2 tablespoons cinnamon
1/3 cup butter, softened

1) Mix brown sugar and cinnamon in a small bowl. Spread the softened butter evenly over the surface of the dough, then sprinkle with the cinnamon sugar mixture.
2) Starting from the long side, begin rolling the dough down to the bottom edge, jelly roll style. Cut the rolled dough into 1 3/4" slices and place into a lightly greased baking pan, allowing about 1 inch space between each.
3) Put the rolls into a warm place and allow to rise again until nearly double in size (approximately 30 minutes). Bake for 10 to 15 minutes or until lightly golden.

While the rolls are baking, mix ingredients for icing.

8 tablespoons butter, softened
1 1/2 cups confectioners' sugar
1/4 cup cream cheese
1/2 teaspoons vanilla extract
1/8 teaspoon salt

Beat well with a rotary mixer until light and fluffy. When the rolls are done, drizzle generously with the icing while still warm.

chinese egg roll

petang semalam saya cuba buat chinese egg roll...kerana tiada ori egg roll skin, saya menggunakan rice paper skin yang saya beli dari Vietnam dulu....intinya menggunakan sayur kobis, carrot, cendawan kering hitam, isi ayam, dan suun...
bahan-bahan atas ni di tumis menggunakan sikit minyak...tumis dulu bawang putih dan halia yang ditumbuk lumat, setelah wangi masukkan cendawan yang telah di rendam dan dipotong kecil...bila cendawan dah agak lembut masukkan kubis dan carot yang telah dipotong halus dan isi ayam (saya menggunakan ready-made grill chicken. ambil isinya sahaja)...campurkan bahan perisa, kicap cair, garam dan gula.
letakkan sedikit inti dan sedikit suun yang telah direndam hingga lembut....dan gulung kemas....
saya cuba goreng rice roll ini seperti resepi asal....walau bagaimanapun saya dapati rice skin memang tidak sesuai untuk di goreng seperti egg roll skin...ia 'makan' minyak...akhirnya kami makan tanpa digoreng dan rasanya tetap sedap dan lebih penting, healthy...

Mutton curry.....resepinya sama seperti kari ayam atau daging....boleh refer resepi-resepi curry yang telah dipostkan sebelum ini. Untuk membuatkan kari daging, ayam atau kambing sedap, saya suka mencampurkan sedikit kerisik kedalam kari tersebut. Cubalah...

fast pizza

how simple! Betty Crocker Bisquick flour mix is so helpful and makes my cooking easy and gives me less headache. With a box of this product you can create many types of dishes and it is all delicious.

Yesterday I made pizza base using this flour and it is crispy and delicious.

The recipe;
1) Heat oven to 180C. Stir 3 cups original Bisquick mix and 2/3 cup boiling water until soft dough forms. Divide dough into fourths. Pat each part of dough into 8 to 10 inch circle on pizza tray and pinch edge to form 1/2 inch rim.
2) Spread Alfredo sauce/pizza sauce on dough. Top with cooked chicken meat or seafood, fresh or canned mushrooms and basil leave. Sprinkle with mozarella cheese.
3) Bake 10 to 15 minutes or until crusts are golden brown and cheese is bubbly. Serve hot.

Note:Using boiling water makes the pizza dough more chewy and flavorful. Keep it to one step by measuring water in a small glass measuring cup and microwaving on High until full bubbles appear.

mango and tamarind juice/smoothie

1 sweet mango, peeled and sliced
1/2 cup tamarind cordial
pinch of salt
ice cubes

Mix all ingredients in juice mixer/blender and blend until smooth. Enjoy!

Note: Make your own cordial: Mix 1 tablespoon of tamarind pulp with 1/2 cup of water. Add 2 to 3 tablespoon sugar. Mix all ingredients in juice mixer and blend till smoth.

ikan bawal kukus

Bahan-bahan3 ekor ikan bawal putih
3 sudu besar sos ikan kukus
2 sudu besar sos masam manis
2 sudu besar sos lada hitam
2 sudu besar sos tiram
3 ulas bawang putih, hiris halus
2 cm halia, hiris halus
garam, gula dan serbuk perisa secukupnya
tomato, cili padi, carrot, daun sup dan bawang goreng

Letak ikan yang telah dibersihkan kedalam bekas tahan panas. Tuangkan sos keatas ikan. Taburkan sedikit garam, gula dan serbuk perisa. Taburkan hirisan bawang putih, cili merah/padi, halia, tomato, carrot (jika suka).

Kukus selama 15 ke 20 minit. Tutup api dan taburkan daun sup/bawang dan bawang goreng. Hidang ketika masih panas.

sambal tahu

seperti membuat sambal tumis biasa. goreng tahu terlebih dahulu. sediakan sambalnya dan siram atau masukkan tahu kedalam sambal.

salad kentang dan tuna

1 can tuna, in water
2 potatoes, cubed
4 long beans, cut into 3cm
1 carrot, slice 1cm
2 hard boil eggs, cubed
2 tomato wedges
1/2 cup corn kernals
1 small zucchini, sliced
1 small onion, thinly sliced

2 tbs lemon juice or apple cider
3 tbs olive oil
1 tsp mustard
1 tsp salt
2 tsp sugar
1/2 tsp pepper
season to taste

1) boil potato, carrot and beans till soft and tender
2) mix all ingredients in large bowl. mix dressing and vegetables and stir till well combine. season to taste. you can add mayonnaise or any other ready-made bottle dressing if you like.

masala tea/chai

Chai in many languages is the term used for tea. It comes from cha, the Chinese word for tea. The proper term for this spiced tea is masala chai, masala being an Indian word meaning any spice blend.

Chai is a beverage that is popular in India. In India, chai is available from street vendors called chaiwallahs. These chaiwallahs carry pots of chai and serve it in freshly fired earthen cups that are discarded after use. It is also a family tradition in India to welcome your guests with cups of chai. Each family has their own recipe and preparation method. Visitors to India who have fallen in love with this magical drink have brought it back to their home town. You can buy instant chai that is loaded with sugar and pre-flavored or you can by pre-blended tea and spices either in tea bags or as loose leaves. You can also purchase chai in a concentrated liquid form or you can make your own to your own tastes.

Ingredients and methods for preparing chai vary with each family - there is no wrong way to prepare it. The most commonly used ingredients include;

Cardamom – A wonderfully fragrant spice that comes in two varieties: green and black. Green cardamom is what you want for chai. To attain the full flavor of cardamom you should heat it in a hot pan, stirring constantly until the aroma strengthens.
Cinnamon – A common spice but usually used in ground form. Cinnamon should be used in chunk or stick form for chai. Sticks should be crushed before use.
Cloves – Cloves are another commonly used spice but only whole cloves should be used for chai. Only one or two cloves are enough to infuse a large pot of chai.
Pepper - Pepper is available in black, white and green varieties. Whole peppercorns should always be purchased for cooking and for making chai. Simply grind when needed.
Ginger – Ginger is a root that should be purchased fresh. Ginger has a pungent, almost citrus flavor with warming effects.
Allspice – Allspice is aptly named because it tastes like a combination of pepper, cinnamon, nutmeg and cloves. The allspice berries should be freshly crushed just before use.

Darjeeling teas are light and refreshing but they do not hold up well to strong spices like cinnamon and ginger. A simple cardamom infusion works well with Darjeeling teas. Nilgiri teas accept flavoring easily and work well for iced chais. Assams have a much more robust flavor and work well for strongly spiced hot chais. Keemun teas are strong like Assams yet they add a slight smokiness with cocoa overtones. Green teas are also used but they do not hold up well to strong spices and must not be boiled or steeped for more than 3 minutes or you will end up with a bitter brew. If you need to avoid caffeine then you have a few options. Decaffeinated teas generally do not have the robust flavor that chai needs. A decaf breakfast blend will offer the best flavor. Another zero caffeine option is Rooibos, an herbal tea that is readily available.

The options for sweetening chai are as varied as chai itself. Regular white sugar works fine in chais but does not add anything but pure sweetness. Unprocessed sugar, aka Turbinado sugar, has more flavor than white sugar and adds a depth to chai. Molasses sugar, dark and unrefined, is excellent in chai. When using honey it is important to use orange or clover honey (the bees used nectar from orange or clover flowers) for the stronger flavor. Sweetened condensed milk is frequently used to add sweetness and a caramelized milky flavor.

There are many brewing options with chai. Generally you start by brewing your spices and sugar to pull as much flavor as possible. This normally takes about 6 minutes. People who like a very strong tea flavor add their tea right away with their spices. But don’t do this with Green tea, as you’ll end up pouring the bitter tasting batch down the drain. After steeping your spices, add milk and bring to almost boiling. Add tea and turn off the heat. Allow the mixture to infuse for 3 to 5 minutes. Strain and serve in prewarmed cups. Do not be afraid to garnish your chai with whipped cream and a sprinkle of cocoa or cinnamon. You can also chill your prepared chai and blend it with ice cream to make a delicious cold chai drink.

Masala Chai Recipe
4 tsp loose tea, usually black
1 piece of dry ginger
3 cardamom pods, crushed
3 whole cloves
1 piece of cinnamon stick
Milk and sugar to taste

Chop up ginger into fine pieces, and break up cinnamon stick. Bring 2 cups of water to a boil, then add tea leaves and all the spices. Let everything brew at boiling for 30 to 45 seconds. Remove from heat, then let steep at room temperature for another minute.

Strain out the tea and pieces of spice. Serve hot and fragrant, with only a touch of milk or sugar.

sotong sumbat telur

10 ekor sotong besar
5 biji telur
5 ulas bawang merah
3 ulas bawang putih
2 sudu besar cili blender
1 cawan santan pekat
1 cawan air
1 keping asam gelugor
serbuk perisa

pecahkan telur kedalam mangkuk, tambahkan garam dan sos ikan dan pukul beberapa minit. panaskan minyak dan goreng telur seperti membuat telur hancur (scramble egg).
bersihkan sotong, sumbatkan telur goreng tadi kedalam perut sotong dan sematkan pencungkil gigi dengan kemas.
tumbuk bawang dan tumiskan dengan sedikit minyak. masukkan cili blender dan goreng sebentar. masukkan sotong dan santan serta satu cawan air. masukkan serbuk perisa dan garam serta lada sulah. masukkan asam keping. tutup periok dam masak hingga sotong empuk dan kuah pekat. kacau sekali-sekala.

salad, fish and chips

kerana tiada sesiapa dirumah semalam, saya makan apa yang ada sahaja. fish and chips, all instant. saya suka product fish fillet ini (i.e. Pacific West) kerana ia menggunakan ikan sebenar. walaupun harganya agak mahal tetapi ia berbaloi kerana jika nak buat sendiri pun belum tentu mendapat hasil sebaik ini. untuk kentang saya menggunakan instant potato wedges. grill dalam oven kerana ia lebih baik dari digoreng (makan minyak banyak sangat nanti). untuk salad saya menggunakan apple, tomato cherry, green salad, thousand island dan mayonnaise. ringkas tapi mengenyangkan. kalau makan diluar dish ini mungkin berharga lebih rm20.....tapi kalau buat sendiri walaupun instant kosnya mungkin sekitar rm5 - rm8 sahaja.

botok telur asin

2 butir telur masin
sehelai daun pisang
sehelai daun kunyit, hiris halus
2 biji bawang merah, hiris halus
1 biji lili merah, hiris halus
3 biji cili padi (jika suka), hiris halus
1 cm lengkuas, hiris halus
2-3 sudu besar santan pekat

Cara membuatnya:
Pecahkan telur masin kedalam daun pisang. masukkan semua bahan (tabur keatas telur masin). Lipatkan daun pisang dengan kemas dan pinkan dengan pencungkil gigi. kukus selama 5 ke 10 minit atau sehingga telur keras.

hot bean tomato soup

for today lunch, I made something simple since we already had heavy breakfast in the bean soup... selain ingredients diatas you need:

1 large white onion
2 tablespoon chilli blender
2 tbs blackpepper sauce
grated parmesan cheese

heat 1/4 cup olive oil and saute chop large onion for 1 minute. add meatball (boleh ganti dengan minced beef if you like). add chili paste. stir for a while then add tomato soup, ready-cut can tomatoes, 500ml tomato juice. cook until meat ball tender. add beans and mix vegetables. season to taste.

Serve hot with spaghetti or garlic bread.
(taburkan dengan parmesan cheese)

for garlic bread, I used:
1 loaf french baguette
3 cloves galic, pounded and mix with
4 tablespoon butter
Mc Cormick Italian mix herbs

Slice bread, spread with garlic butter and sprinkle with herbs. Grill in oven for 7 minutes.

chicken kurma

1 whole chicken, cut into 8 pieces
3 large potatoes, peel and cut into 1/4
1 large carrot, peel cut into 1-inch
2 white onions, cut into 6 wedges
2 fresh red chilies cut into half
1 large tomato cut into 4 wedges
5 tablespoons kurma curry powder mixed with
3/4 cup water
2 cups plain water
1 cup thick coconut milk
3 pieces tamarind pulp or
2 tablespoons tamarind juice
3 cm cinnamon sticks
2 star anise
4 cardamoms
1/2 cup oil
salt, and 1 teaspoon sugar
1 stalk spring onions cut into 1-inch

Pounded ingredients
3 garlic cloves
2 inches fresh ginger
5 shallots

Heat oil in a deep saucepan and fry pounded ingredients until fragrant.
Add cinnamon, star anise and cardamom. Fry for 2 more minutes.
Add kurma curry powder paste and cook on low heat for 5 minutes or until oil separates.
Add chicken pieces and 2 cups of water and cook chicken on low until half cook.
Add coconut milk, potato, carrot and cook until potato tender. Add more water if the gravy too thick.
Add onions, chillies, tomatoes and tamarind. Cook for 2 more minutes. Season with salt and sugar.
Garnish with spring onion.

cucumber and carrot pickles

you need
1 small cucumber, cut into 2" lenghtwise, cut into half and remove seeds, then slice thinly (refer photo above)
1 carrots, cut into 2" lenght and thinly slice
4 shallot, halve
3 cloves garlic, halved
1 red chilli, halve and slice
chilli paste
mustard or mustard seeds (optional)

heat 3 tablespoon oil and saute shallots and garlic, add 2 tablespoon chilli paste. Stir for 1 minute before add the slice chilli, cucumber and carrot. Season with salt, pepper, lots of sugar and one teaspoon venegar. stir for 1 to 2 minutes before remove from heat. Sprinkle with sesame or mustard seeds (optional).

lychee ribena juice

1 can of lychee in syrup
1/4 cup ribena (grape cordial)
1/2 cup cold water

Blend all ingredients in a juice mixer or blender. Serve.

agar-agar kelapa muda...

dalam keadaan cuaca panas, agar-agar ini mampu menghilangkan dahaga dan menyejukkan badan...kalau bulan puasa memang sesuai sangatlah sebagai pemanis mulut...

2 biji kelapa muda
1/2 bungkusan agar-agar kering
1.5 L air campuran dengan air kelapa muda
gula secukupnya
food colouring (jika suka)

masak agar-agar dengan air dan gula hingga mendidih dan gula larut sepenuhnya...letak isi kelapa muda dalam bekas agar-agar individu...tuangkan agar-agar yang telah di masak tadi....sejukkan dan sedia di hidang...

nasi goreng daging dan asparagus

nasi goreng, hidangan paling ringkas dan selamat....kenapa saya katakan selamat....kerana ia pasti disukai jika sedap bahan tumis dan campurannya, mudah dan tak banyak belanja...lagi pun kita boleh menggunakan nasi semalam yang tidak habis (lebih baik)....

untuk nasi goreng diatas, saya campurkan sayur asparagus dan daging sandwich atau anda boleh campurkan daging fresh jika suka. Potong daging kecil dan tumiskan dengan bawang dan lain-lain bahan. Akhir sekali masukkan asparagus dan goreng sehingga nasi garing.

kacang kuda goreng

1 paket kacang kuda
1-2 sudu rempah kari
daun kari
cili kering

Rendam kacang kuda semalaman. Rebus dengan sedikit garam sehingga empuk. Panaskan sedikit minyak dan tumis daun kari, cili kering dan rempah kari. Setelah wangi masukkan kacang kuda tadi dan goreng sehingga kering. Tambahkan garam dan perisa jika perlu.

sup ikan merah

Sup ikan merah yang mudah dibuat. Menyihatkan dan rendah lemak. Jika anda ingin menurunkan berat badan cubalah resepi ini. Saya menggunakan periok tanah (clay pot) kerana aromanya yang enak dan sudah pasti kelainan dari segi rasa (lebih sedap terutama jika masak kari). Clay pot banyak dijual di supermarket seperti Giant, Tesco, Carefour dan kedai-kedai runcit Cina. Banyak kegunaan clay pot dan harganya tidaklah mahal.


1 ekor ikan merah sederhana besar
1 inci halia, cincang
2 ulas bawang putih, cincang
1 btg kulit kayu manis, sedikit bunga lawang
1 sup bunjut
1 batang lobak merah
garam dan serbuk perasa secukupnya
serbuk lada sulah (white pepper)
daun sup
bawang goreng

1) Bersihkan ikan dan dipotong kepada beberapa bahagian
2) Masukkan kedalam periok dan tambahkan air sehingga ikan terendam sepenuhnya.
3) Hidupkan api. Masukkan sup bunjut.
4) Setelah mendidih, masukkan lobak merah.
5) Tumis cili padi, bawang putih, kulit kayu manis, bunga lawang, halia dengan sedikit minyak. Setelah keperangan dan wangi tuang bahan ini kedalam periok rebusan ikan tadi dan biarkan ia terus mendidih perlahan-lahan lebihkurang sepuluh minit. Tambahkan bahan perisa, garam dan lada sulah.
6) Angkat dari api, taburkan bawang goreng dan daun sup.
7) Hidang panas dengan nasi dan sayuran.

meehoon goreng

Bermacam cara menyediakan meehoon dan goreng adalah salah satu yang paling mudah dan digemari. Saya suka meehoon yang halus dan tidak liat. Meehoon boleh di goreng dengan ayam, daging, makanan laut atau hanya menggunakan telur.

400g meehoon, soaked in water to soften and drained
1 chicken breast, sliced
3/4 cup cooking oil
2 bean curd cakes, fried and sliced
2 tablespoon dried chilli paste
300g bean sprouts
200g mustard greens, cut into 4cm lenghts
200g chives, cut into 4cm lenghts
2 beaten eggs
salt and sugar to taste

Pounded Ingredients
3 shallots
5 cloves garlic
10 dried chillies
3 tablespoon dried shrimp

Head oil and fried pounded ingredients until fragrant. Add chicken meat and stir-fry until chicken cooked.
Add in rice noodles, mustard leaves, chives and stir well.
Add in beaten egg and stir. Mix in bean sprouts, fried bean curds, seasoning ingredients and stir for well.
Serve noodles garnished with sliced spring onions, omelette strips, sliced red chilli, fried shallots.

lemak kubis

sayur lemak kubis, carrot, cendawan dengan udang.

cokodok pisang

Petang-petang dalam cuaca redup begini pasti enak kalau ada cokodok pisangkan! pekena dengan kopi atau teh o panas....hmm....

2 cups mash very ripe bananas
1-2 cup plain flour
1/2 teaspoon bicarbonate of soda
1/2-1 cup sugar
1/2-1 teaspoon salt
1-2 cup water
oil(for deep frying)

Mix all ingredients and stir with the spoon or your fingers until the mixture becomes slightly thicker than a cake batter.
Heat oil in deep frying pan over medium flame. Using right hand finger tip, scoop about 1 tbs banana mixture into hot oil (Do it slowly and gently). Try to make it as rounded as possible.
Fry for 2 to 3 minutes before stir. Cook for another 3 to 5 minutes or until the colour turn slightly dark.
Serve hot with a cup of tea of coffee.

grill chicken with lemon and blackpepper

for this recipe, I marinade one and half chicken with lemon and black pepper seasoning, season with salt and drizzled with good quality olive oil. Place them in the oven and bake for one and half hour. Turn over the chicken once.

halfway through the cooking process place russet potatoes, baby carrots and one large white onion (cut into wedges and sprinkle with lemon blackpepper herbs, salt and olive oil) and continue with the baking. After the chicken is done, remove from the baking tray. Mix one packet of McCormick brown sauce with one cup of water. Pour the mixture into the baking tray to mix with the chicken leftover sauce in the tray. Stir the mixture thoroughly and put it back in the oven and heat it for another ten minutes.

Garlic bread (Cut french bread into slices and spread with garlic butter -I made my own garlic butter. Sprinkle the bread with herbs -Italian herbs). Bake in the oven for 15 to 20 minutes at 180C. Serve them with ready made, Knorr mushroom soup and green salad.

best ever carrot cake

Ini adalah resepi carrot cake yang sangat sedap dan anda harus mencubanya. Saya terjumpa resepi ini ketika melayari laman web beberapa tahun lalu dan mencubanya. Sehingga kini ia menjadi kegemaran keluarga. Walaupun bahannya kelihatan banyak dan remeh tetapi hasilnya....membuatkan anda tersenyum.....anda mesti cuba ya!


2 cups plain flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 1/2 teaspoons cinnamon
4 large eggs
1 1/2 cups oil
2 cups caster sugar
2 3/4 cups coarsely grated carrots
1 (8ounce) can crushed pineapple
3/4 cup chopped walnuts or pecans
1 cup shredded coconut or desiccated coconut

Topping cream cheese frosting
1/2 cup butter
1 (8ounce) package cream cheese
1 1/2 teaspoons vanilla essence
1 lb icing sugar

Sift together all dry ingredients.
In large bowl, stir together sugar, eggs and oil with wooden spoon until well blended, about 5 minute.
Add flour mixture a little at a time, mixing well after each addition.
Add carrots, nuts, pineapple and coconut and blend thoroughly (squeez juice from carrots and pineapple).
Bake in grease and line springform pan for about 60 to 90mins @ 180°C.

Cream cheese frosting - cream butter, cream cheese and vanilla. Add icing sugar a little at a time and blend well. Add a tsp of milk if the mixture too thick.

gulai tempoyak perak

mak saya suka masak gulai tempoyak....sebab dia memang orang Perak jati...dan gulai tempoyak mak saya menjadi kegemaran anak-anak dan cucu-cucunya hingga kini. Setiap kali musim durian di kampung pasti mak saya akan buat tempoyak dan bawa ke KL....bukannya apa, sebab dia tahu kat KL ni susah nak dapat tempoyak baru dan mahal pula.....memang terliur kalau ingatkan tempoyak mak....

1 ekor ikan senangin sederhana besar (anggaran 500g)
3 sdb tempoyak
1 biji bawang besar
3 biji cili merah
3 biji cili padi (optional)
kunyit hidup
1 batang serai, diketuk
3 cawan air (kalau nak kuah banyak lebihkan air)

Cara Membuat
1) Ikan senagin disiang dan dipotong keping-keping
2) Blender tempoyak, bawang besar, cili merah, cili padi, kunyit hidup dan air.
3) Rebus bahan blender dan serai hingga mendidih. Masukkan ikan. Rasa asam dan garamnya. Renih hingga kuah pekat dan ikan masak.
4) Jika rasa kurang masam tambahkan 1 keping asam gelugor.

rendang kerang opah

ini adalah salah satu my mum's specialty...rendang kerang....boleh dikatakan setiap kali menjelang raya, mak akan beli berkilo-kilo kerang, rebus dan kopek isinya....memang renyah membuatnya...tapi berbaloi dan something differentlah kan...:)

2 kg kerang direbus dan dikupas

bahan-bahan untuk dikisar
1 biji bawang besar
5 ulas bwg putih
2 inci lengkuas
2 inci halia
2 inci kunyit hidup
1 btg serai
15-20 tangkai cili padi

lain-lain bahan
1 sudu besar rempah kari
1 keping asam keping
2 sudu besar kerisik
1 sudu gula
1 1/2 cawam pati santan
garam dan bahan perisa secukup nya
daun kunyit dihiris halus

cara buatnya
1) masukkan semua bahan-bahan yg telah dikisar, pati santan, rempah kari kedalam kuali...masak di atas api sederhana sehingga kering sedikit, kemudian masukkan kerang dan gaul sebentar.
2) biar sehingga rendang agak kering, kemudian masukkan pula kerisik, garam dan bahan perisa....kemudian masukkan daun kunyit...kacau sehingga rendang kering (terpulang kepada selera anda, samada suka rendang yang kering atau berkuah).

nasi goreng tom yam

Tumis bawang putih, halia dan serai (cincang atau tumbuk lumat) dan masukkan perencah nasi goreng tomyam Adabi. Kemudian masukkan isi ayam (cincang) dan kacau sehingga ayam masak. Masukkan nasi dan kacau lagi, kemudian masukkan mix vege. Rasa garam dan lain-lain perisa. Jika nak pedas masukkan cili padi semasa menumis tadi (dicincang). Sebelum diangkat dari kuali masukkan hirisan daun ketumbar. Hmmm.....yummy! hidang panas.

ayam goreng berempah

1 whole chicken, chopped

pounded of blend
6 small red onion
6 cloves of garlic
3cm ginger
1/2 cup plain flour
1 tsp turmeric powder

Mix pounded ingredients to chicken pieces, add salt and pepper and marinde for 2 hours in the fridge.

Heat oil for deep frying and fry chicken till well cook. Remove and set aside.

Heat 3 tablespoon oil. Saute 1 thickly sliced large onion, curry leaves, sliced of red chillies, 1 tablespoon meat curry powder and 1 tablespoon chilli powder till onion turn into brown colour. Add chicken and fry for a few minutes. Remove chicken from heat and garnish with coriander leaves. Serve hot with rice.

ayam masak tomato

1/2 ekor ayam, potong kecil
4 sudu besar sos tomato
3 sudu besar cili blender
1 sudu besar sos tiram
3 ulas bawang putih
3 ulas bawang merah
1 inci halia
1 biji bawang besar, potong bulat
cili hijau dan daun sup/bawang
tomato, potong wedges

Gaul ayam dengan sedikit garam dan goreng hingga separuh masak. Ketepikan.
Tumbuk bawang putih, merah dan halia sehingga hancur. Panaskan minyak dan tumiskan bahan tumbuk hingga kekuningan. Masukkan cili blender dan kacau hingga pecah minyak. Masukkan ayam dan semua sos. Kacau 5 minit. Masukkan bawang besar, cili hijau, tomato dan kacau. Tambahkan garam dan perisa jika perlu. Hidang panas.

mee kuah daging dan udang

Ini adalah salah satu hidangan mee kegemaran ramai (family and friends). Tetapi membuatnya agak remeh dan memerlukan masa yang panjang kerana kuah mee perlu direbus sehingga daging dan ubi empuk dan hancur. Belanja membuatnya juga tidak sedikit....dan rasanya....hmmm...sudah pasti sedap...
Kuah Mee:
1 kg tulang lembu (rusuk)
1 kg daging lembu, potong kiub besar
300g udang basah, besar
100g udang basah kecil (berwarna putih)
2 - 3 ketul ubi keledek
4 sudu besar cili kering kisar
1-2 labu bawang besar, dikisar
1 inci halia, di ketuk atau dikisar
1 cawan (atau lebih) serbuk kuah kacang (kuah pecal)

Lain-lain bahan:
2 bungkus mee kuning
1 ikat sawi
2 cawan taugeh
Tahu, digoreng dan potong nipis
Kueh cucur udang, potong kecil-kecil
Telur rebus, dibelah dua
Cili hijau jeruk
hirisan daun sup dan daun bawang
bawang goreng
hirisan limau nipis

Cara membuatnya:
Rebus tulang dan daging lembu dengan air yang banyak selama satu jam. Masukkan cili kisar, bawang dan halia dan rebus lagi. Basuh udang besar dan rebus (tak perlu buang kepala, kulit dan ekornya). Setelah udang masak toskan dan airnya di campurkan kedalam rebusan tulang tadi. Ketepikan udang.

Udang kecil di bersihkan (tak perlu buang kepala dan ekor), di rebus dan dikisar, kemudian di campurkan ke dalam kuah daging tadi. Masukkan ubi keledek yang dipotong kecil-kecil dan rebuslah hingga ubi hancur dan daging benar-benar empuk. Masukkan kuah kacang. Tambahkan garam, gula dan serbuk perisa. Tambahkan sedikit sos tomato jika anda suka. Jika anda sukakan kuah mee yang pekat, masukkan beberapa keping biskut cream crackers (hancurkan).

Panaskan air dalam periok hingga mendidih. Masukkan mee, sawi dan taugeh. Celur sebentar selama dua minit. Angkat dan hidangkan dalam mangkuk mee. Masukkan lain-lain bahan dan tuangkan kuah yang masih panas.
