ice-cream pudding
something different...You only need 4 items:
Jelly, ordinary long strip jelly....1/2 packet (10g)
plain water 800ml to 1L
1 bucket of ice-cream, any flavour (I use 800ml strawberry ice-cream)
fruits (optional)
Boil jelly with 0.8 to 1L plain water (add sugar if you like) until completely dissolve. Remove from heat. Pour ice-cream in hot jelly, then fruits (finely chopped). Stir until ice-cream completely melts. Pour into desire mould and leave to cool for half an hour. Transfer to fridge...enjoy...
You can use any flavour of ice cream....

IngredientsPeeled and Chopped Young Jackfruit into 2cm cubes - about 3 cups
1/2 cup dried anchovies, cleaned
2 cm ginger, crushed
3 cloves garlic, pounded
5 small onion, pounded
4 tablespoon meat curry powder, mixed with 1/2 cup water
3/4 cup yogurt or
3/4 cup coconut milk
3 cups water
4 tablespoon Oil
Salt and sugar to taste
Whole spices -
Cloves 5-6
Cinnamon - 1 sticks
Star Anise - 2
Directions
Boil jackfruit until tender. Drain water and set aside. Heat oil in a deep saucepan and fry ground ingredients, whole spices, curry leave until fragrant. Add in curry paste and stir for a few minutes until fragrant. Add water, jackfruit, anchovies and bring to a boil. Add yogurt or coconut milk, salt and sugar to taste. Simmer for 5 to 10 minutes. Serve hot with white rice.
Note - If your prefer thick and creamy curry gravy, add more coconut milk or if the gravy too thick add more water. You can replace anchovies with chicken or beef (cut into bite size pieces).

pai ni memang sedap, tapi banyak kerja sikitlah kalau nak buat....tapi amat berbaloi...sedap...Ingredients
PASTRY
1 cup plain flour
1 cup self raising flour
1/2 cup caster sugar
125g butter
1 egg yolk
water
FILLING
500g pumpkin, seeded, peeled and cubed
1 cup milk
2 eggs
1/2 cup maple or golden syrup or honey
1/3 cup brown sugar (optional)
3 tbs plain flour
1 tsp cinnamon powder
1/2 tsp ginger powder
1/2 tsp nutmeg
Method
PASTRY
1) Combine flours and sugar. Rub in the butter until mixture resembles fine breadcrumbs.
2) Stir in egg yolk and sufficient water to make mixture hold together. Chill for 30 minutes.
FILLING
1) Place pumpkin in a bowl cover with water and cook until pumpkin is tender. Drain.
2) Preheat oven to 200C.
3) Mash pumpkin, stir in milk, eggs, syrup, flour and spices until well combined.
4) Roll out pastry to line a 25cm greased removable base flan tin. Cook for 7 minutes on 200C.
5) Pour pumpkin filling over pastry and sprinkle with nutmeg.
6) Bake for 15 to 18 minutes for 180C.
7) Serve hot or cold.

easy carrot cake
I got this recipe from Bob's Red Mill Whole Wheat Pastry Flour package.
Ingredients;
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup canola oil
2 large eggs
1/2 tsp salt
1 tsp ground cinnamon
1 cup Bob's Red Mill Whole Wheat Pastry Flour
1 cup grated carrot
1/4 cup chopped walnuts
3/4 tsp soda
1 tsp baking powder
8 oz crushed pineapple, drained
Pour into a greased 9" X 9" pan and bake at 180C until toothpick comes out clean (about 40 minutes).
3 tbsp soft margarine or butter
3 tbsp softened cream cheese
1/2 tsp vanilla and
enough powdered sugar to make it just that right consistency.

6 urat kacang panjang, potong 2cm

1 sudu besar udang kering
3 las bawang putih
2 ulas bawang merah
1 biji cili merah, buang biji
Panaskan dua sudu besar minyak dalam kuali, tumis bahan tumbuk sehingga wangi. Masukkan kacang panjang dan kacau sehingga kacang masak. Masukkan garam, gula dan sos ikan. Hidang panas dengan nasi dan kari.

Bahan-bahan
4 biji telur, dipukul dengan sedikit garam dan seasoning
1/2 cawan cincangan lobak masin
4 biji cili kering, di potong 1cm panjang
1 biji bawang besar, potong bulat dan nipis
CaraPanaskan 3 sudu besar minyak, masukkan lobak masin, cili kering dan bawang besar dan goring sehingga kekuningan. Masukkan telur yang telah dipukul kuat tadi. Tuangkan kedalam kuali dan kacau semua bahan sehingga telur keras. Mesti dihidangkan ketika masih panas.

3 tablespoon plain flour or season flour
1 large onion
1/2 small cucumber
1/2 small carrot
4 tablespoon mango sauce
1 tablespoon chilli paste
3 cloves garlic
2 cm ginger
5 small red chillies
1 teaspoon fish sauce
salt and sugar to taste
Mix chicken stripe with flour, salt and pepper and stand for 15 minutes. Heat oil and deep fry chicken till golden. Transfer to serving plate. Set aside.
Heat 3 tablespoon oil, saute chopped garlic and ginger and chilli paste. Add chopped carrot and cucumber and continue to stir for few minutes. Add mango sauce, onion (wedges), chopped small hot red chillies and 1 teaspoon fish sauce and 1/4 cup plain water. Season with salt and sugar. Cook until sauce thick.
Pour mango gravy over fried chicken and decorate with spring onion. Serve hot.

1) Panaskan mentega dan tumis bawang hingga kuning.
2) Masukkan beras dan kacau kira-kira tiga minit.
3) Pindahkan beras ke dalam periok elektrik dan masukkan air. Masak sehingga kering.
4) Bila nasi telah kering masukkan kulit kayu manis, bunga cengkih dan kismis.
5) Hidangkan dengan lauk pauk seperti kari dan rendang.

guacamole
Nachos or tortilla chips are the perfect accompaniment for this classic Mexican Dip.Ingredients
2 ripe avocados
2 red chillies, seeded
1 garlic clove
1 shallot
2 tablespoon olive oil
juice of one lemon
salt
flat leaf parsley leaves, to garnish.
Directions
1) Halves the avocado, remove their stones (pits) and scoop out their flash into a bowl.
2) Mash the flesh well with a large fork or a potato masher.
3) Finely chop the chillies, garlic and shallot, then stir into the mashed avocado with the olive oil and lemon juice. Add salt to taste.
4) Spoon the mixture into a small serving bowl. Drizzle over a little olive oil and scatter with a few flat leaf parsley leaves. Serve.

simple nachos
Terasa lapar malam ni, tercari-cari apa nak makan. Nachos ada, cream cheese ada, sos juga ada, jadi apa lagi. Senang je, mula-mula tuangkan nachos kedalam bekas kaca tahan panas berukuran 9 x 13 inci , diikuti dengan small cucumber pickles, black olive, cili hijau jeruk yang telah dicincang, taburkan cream cheese yang telah di potong kecil (cubed), ready made pasta sauce atau apa saja sos yang anda suka. Masukkan kedalam oven dan panaskan 10 minit pada 180C. Keluarkan dari oven, tambahkan sos cili, mayonaise, dan nah enjoy!!!

cereal dan yogurt

1 cawan cereal, high fibre
3 sdb oat segera
1 cawan yogurt buah (dutch lady)
1 biji pisang,
atau buah-buahan kegemaran anda
susu rendah lemak
Cara Membuat
Campur semua bahan dan sedia untuk dihidang.

1 cup cold water
1 - 2 tbsp lemon juice
2 or more tbsp white sugar
pinch of salt
ice cube, crushed
mix papaya, water, sugar and salt in a blender and blend till smooth. Add lemon juice. Blend for few seconds. Add ice and enjoy.

mee kuah udang kepal
Bahan-bahan
kisar
1 labu bawang besar
5 ulas bawang merah
5 ulas bawang putih
1 cm halia
lain2 bahan
udang besar
1 cawan udang kepal/geragau
ubi keledek cincang
1/2 cawan cili blender
1/2 cawan sos tiram
1 cawan serbuk kacang
mee kuning, celur dengan air panas
sawi, potong
cili merah potong
bawang goreng
telur
Cara membuatnya
1) Panaskan sedikit minyak dalam periok dan tumis bahan blender dan cili blender sehingga wangi. Masukkan udang kepal/geragau dan kacau sebentar. Masukkan air 5 liter dan ubi keledek dan biarkan kuah mendidih perlahan selama 15 minit. Masukkan udang besar, sos tiram, sos cili, serbuk perisa, serbuk kacang, garam dan gula. Biarkan mendidih sehingga udang masak. Tutup api.
Cara menghidang
1) Panaskan kuali kecil dengan api yang perlahan. Sendukkan 2 cawan kuah tadi dan beberapa ekor udang kedalam kuali. Masukkan sedikit sawi potong dan pecahkan sebiji telur. Renihkan api dan masak perlahan sehingga telur sedikit keras (biar kuningnya cair).
2) Letak mee ke dalam mangkuk (untuk satu hidangan) dan tuangkan kuah yang panas keatas mee. Hiaskan dengan daun bawang, cili merah dan bawang goreng. Sedap dimakan ketika masih panas.
3) Jika suka pedas anda harus tambahkan cili blender. Kuantiti kuah adalah untuk 10 hidangan atau mungkin lebih. Jika suka anda boleh tambahkan sos cili dan kicap manis.
