very moist (lembab) carrot cake....delicious and something different compare to ordinary carrot cake. got this recipe from AWW.
2 tsp grated orange rind
3/4 cup castor sugar
1 tablespoon golden syrup
1 1/2 cups coarsely grated carrot
1 1/2 cups self-raising flour
1/2 tsp bicarbonate of soda
1/4 cup cocoa
3/4 cup milk
1) heat oven to 180C.
2) cream butter, rind and sugar in small bowl with electric mixer only until combined. beat in eggs and golden syrup. stir in carrot, sifted flour, soda, cocoa and milk in 2 batches.
3) pour mixture into prepared pan. bake in moderate oven for about 50 minutes or until firm.
4) spread cold cake with frosting.
cream cheese frosting
125g cream cheese
1 tsp grated orange rind
3 cups icing sugar
beat cream cheese, butter and orange rind until light and fluffy. gradually beat in sifted icing sugar until combined.
