home made curry powder

MEAT CURRY POWDER

Ingredients
600g coriander seeds
200g fennel seeds
150g cummin seeds
150g dried chillies
50g dried turmeric
50g black pepper
30g cinnamons stick
30g cardamoms
30g cloves and star anise

Methods
Blend all the ingredients until smooth. Keep in an airtight container and store in fridge.

BASIC REMPAH FOR LONTONG

Pound or blend the following:
70g dried chillies
400g sliced shallots
130g sliced garlic
100g sliced lengkuas
100g sliced ginger
50g turmeric root
100g sliced lemongrass
30g chopped buah keras

This should give you about 7 cups of basic rempah which you can freeze in separate 80or 100ml bags until ready to use.

SEAFOOD CURRY POWDER

Ingredients
600g coriander seeds
200g cummins seed
100g fennel seed
50g black pepper seeds
150g dried chillies
50g dried turmeric

Direction
Blend all ingredients and keep it in an airtight container. Store in cool place.
